Mama K's minestrone

A little help from a seasoning mix isn't cheating.

 

Another soup, another Mama K classic. This minestrone isn't 100% homemade - getting a little help from a seasoning mix from Bear Creek. Make it your own by loading it up with fresh veggies of your liking and ground Italian sausage for a heartier soup.

Ingredients

  • 1 packet Bear Creek minestrone soup mix

  • 8-10 cups fresh or frozen veggies of your liking, roughly chopped (e.g. cauliflower, broccoli, green beans, corn, carrots, spinach)

  • 1 lb ground Italian sausage (optional)

  • 1 quart low sodium beef stock

  • 1 quart water, to taste

  • Salt & pepper

Instructions

  1. Combine soup mix with beef stock and water in a large pot, bring to a boil.

  2. Roughly chop your veggies!

  3. Add veggies and ground sausage if using, reduce heat to low, simmer for ~30 minutes, stirring occasionally.

  4. Add salt & pepper to taste.

  5. Serve on its own or as we did with a grilled cheese! :)
