Chicken piccata

A classic zingy, zesty comfort food.

Not too much to say here other than enjoy this simple, classic and easy to prepare chicken piccata that is sure to impress at any dinner party.

Ingredients

  • 4 thinly sliced or pounded chicken breasts (1/4 - 1/2 inch thick)

  • 1/4 cup flour

  • 3 tablespoon capers

  • 3-5 cloves garlic

  • 1 cup chicken broth

  • 6 tablespoons lemon juice

  • 2 tablespoons butter

  • Parsley to garnish (optional)

  • Olive oil

  • Salt & pepper


Instructions

  1. Dredge chicken breasts in a mixture of salt, pepper and flour. Shake off excess.

  2. Heat olive oil in a heavy skillet over medium-high heat and sear chicken until browned and mostly cooked through (can be slightly under, ~3 minutes per side).

  3. Remove chicken from skillet and set aside. Turn heat to low.

  4. Add a bit more oil and capers to the skillet. Cook 1 minute until fragrant.

  5. Add garlic and cook another minute, being careful not to burn.

  6. Add chicken broth and lemon juice. Let reduce for ~5 minutes. Adjust to taste - as needed add more broth, lemon juice, salt & pepper, or flour to help thicken.

  7. Return chicken to the skillet and add butter and parsley (if using).

  8. Enjoy!
